1 cup. butter
1 sugar
1-teaspoon corn syrup
2 teaspoons water
1 1/2 teaspoon vanilla
2 cups chocolate chips or butterscotch chips
1/2 cup chopped nuts (pecans, walnuts)
Combine butter, sugar, corn syrup and water and microwave on high for about 10 minutes, stirring a couple of times in between. Stir in vanilla and chopped nuts and butterscotch chips. Spread the mixture into a greased baking dish and chill the mixture until cool. This will need to be cut into uneven pieces.
Stars and Stripes Cookies
1 cup margarine, softened
1 egg white, lightly whipped
2-1/2 multipurpose flour
1-1/2 cups granulated sugar
2 teaspoons vanilla essence
1- 1/2 teaspoons baking powder
1 teaspoon red food coloring
1 teaspoon blue food coloring
Combine egg white, margarine and vanilla essence. Mix the dry ingredients like flour, sugar and baking powder. Prepare dough by folding in the flour mixture with the wet ingredients. The dough can then be divided into 3 portions. The red and blue coloring can be added to each portion. Create bars of equal length of all the 3 colors -red, blue and white. Stack them on each other. Wrap the entire bar in wax paper and chill until firm. Cut the entire bar into slices of desired size. Bake in a pre-heated oven for about 12 minutes. When it is cooling, you can sprinkle some powdered sugar.

225 g unsalted butter
225 g each of raisins and sultanas
100 g glazed cherries halved
50 g each of dates, dried figs
Juice of 2 oranges
225 g brown sugar
4 eggs
225 g flour
1 tsp each of powdered spices (cinnamon, nutmeg, cloves)
100 ml brandy
Put sultanas, raisins, cherries, dates, figs and brandy into a large pan. Bring to a boil and let it soak for about 30 minutes. Whisk together butter and sugar until fluffy. Beat in the eggs into the mixture. Fold in the flour, spices, nuts and soaked fruits along with the leftover brandy. Spoon the mixture into a greased cake mould. Bake for 3 hours in a pre-heated oven at 300 degrees F.

A traditional Christmas dinner is not complete without a turkey or goose. Served with potatoes roasted in goose fat and crisp broccoli or spicy red cabbage, it makes for a delicious Christmas dinner. Wash goose and pat dry. Truss and tie it once you have stuffed it. Prick it all over with fork. Brown the goose lightly on a pan and set it breast side up. Cover with a little water and roast for nearly an hour at 375 degrees F. Prepare the vegetables - chopped onions, carrots, garlic, bay leaf, celery, cloves and thyme. Roast it for about 20 minutes with the goose, adding water if required. Stir in some tomato paste, broth and white wine to create gravy. Cornstarch can be used for thickening.
